Zdrowy talerz/Healthy plate

Zdrowie na talerzu! Pyszny, soczysty gotowany kurczak z warzywami. Inspirowałam się absolutnie fenomenalną książką Donny Hay "Fresh and light".

Składniki (1 porcja)

1 pierś z kurczaka
1/2 cytryny
1 l bulionu warzywnego lub drobiowego
kilka gałązek świeżego tymianku lub 1 łyżeczka suszonego
kilka ziarenek czarnego pieprzu
sól
szczypta ostrej papryki

Do podania
warzywa (ja użyłam kapusty pekińskiej, czerwonej i zielonej papryki i marchewki)
sos sojowy
prosty winegret (sól, świeżo zmielony pieprz, 1 łyżeczka octu jabłkowego lub białego winnego, 3 łyżeczki oliwy z oliwek)


Przygotowanie

Do dużego garnka wlać bulion, dodać cytrynę pokrojoną w plasterki, tymianek, ziarenka pieprzu, 1/2 łyżeczki soli i zagotować.

Przygotować kurczaka: usunąć błonki, kostki i włożyć do gotującego się bulionu. Gotować przez 3 min., następnie zdjąć z ognia, przykryć garnek i zostawić na przynajmniej 10 min., aby kurczak się ugotował.

Kurczaka wyjąć z bulionu i odłożyć na kilka minut do odpoczęcia. Następnie pokroić w plasterki i posypać ostrą papryką.

Podawać z warzywami i sosami.

Healthy plate


Ingredients (serves 1)

1 chicken breast
1/2 lemon
1 l vegetable or chicken stock
few sprigs of fresh thyme or 1 teaspoon dried one
a few grains of black pepper
salt
pinch of cayenne pepper

To serve
vegetables (I used Chinese cabbage, red and green peppers and carrots)
soy sauce
simple vinaigrette (salt, freshly ground pepper, 1 teaspoon cider
or white wine vinegar, 3 teaspoons olive oil)


Method

Add the stock to a large pot, add the sliced lemon, thyme, peppercorns, 1/2 teaspoon salt and bring to a boil.

Prepare chicken: remove the film, bones and add to the boiling stock. Cook for 3 minutes, then remove from the heat, cover the pot and leave for at least 10 minutes so that the chicken is well cooked.

Remove the chicken from the stock and set aside for a few minutes to rest. Then cut into slices and sprinkle with cayenne pepper.

Serve with vegetables and sauces.
